This gram-positive bacteria has been the cause of numerous outbreaks of foodborne diseases in the last decade. Listeriosis is usually found in pregnant women and their fetuses, people with immune problems, with symptoms of abortion, neonatal death, septicemia and meningitis, with a mortality rate exceeding 20%.
Listeria is usually found in food, but the highest rates are in meat, poultry and seafood. It survives periods of cold storage and it grows at temperatures as low as 0°C. It also survives at high salt concentrations for long periods of time and is relatively resistant to dehydration.
